Weird Recipe Wednesday: Peanut Butter-Banana Soft Serve with Basil and Chocolate Chips

Weird Recipe Wednesday: Because some recipes are so weird I just HAVE to try them.  My curiosity always gets the better of me.

After their last get together, peanut butter, banana, chocolate chip and basil decided to give it another try.  Okay fine, I made them go, but sometimes you just need that extra push out the door.

 It turns out you can't force some things. Working well in pairs or small groups doesn't mean everyone should form a large group and expect the same results.  Chocolate and basil are mischievous and playful, subtly mimicking the famous chocolate mint duo.  When peanut butter and basil get together, a more formal yet innovative interaction occurs.  Chocolate and peanut butter work so well together, they often have trouble including others.  Sometimes they have fun with banana as the third wheel, but they aren't as accepting with basil.

When all four got together for dessert, it wasn't a disaster, but no one will go out of their way to repeat the event.  It was jut too confusing, like a sweet and nutty mint chocolate chip sundae.

If you still haven't tried making your own banana soft serve, it's not too late.  The Indian summer days we've been having are the perfect excuse to whip up a cool and creamy treat, just leave out the basil (or if you're just curious, try using a less basil).  Frozen bananas are sweet and creamy, the perfect base for a healthy dessert.

Peanut Butter-Banana Soft Serve with Basil and Chocolate Chips

Ingredients:
1 large ripe banana, sliced and frozen
1 Tbsp peanut butter
1 Tbsp chopped fresh basil
2 tsp mini chocolate chips

Instructions:
* In a food processor combine frozen banana slices and peanut butter. Process until smooth, scraping down sides as needed. Mixture should be the consistency of soft serve ice cream.
* Add basil and pulse to combine.  Remove mixture from food processor and stir in chocolate chips.  Serve immediately.
